Muscat (a petits grains) - does exceptionally well in the hot vine-growing region of the Swan Valley. This Muscat began existence as grapes that were hand thinned at the green berry stage so that the vine can sun-ripen its remaining grapes to high sugar levels.
The hand picked grapes produce a sweet table wine. This luscious sweet wine, has a light pink colour, a nose of rose petals and has lingering flavours of turkish delight. Drink now.
The ripe Swan Valley Muscat was crushed, destemmed prior to being pumped to the ferment tank. The ferment started with natural yeasts and continued at 25C until the ferment has proceeded through 3 Be'.
The skins were drained and basket pressed, the juice returned to an open fermenter under the verandah. The ferment continued at 25C until the carbon dioxide gas production slows.
After summer the wine was bottled and sealed with natural cork.
This wine has no alcohol added and is high in antioxidants.
Alcohol - 10% pH 3.25, Residual Sugar 2+ Baume Total sulphides SO2, less than 125 ppm.
