Our ripe dry organically grown organic shiraz is grown under the strict regime of certified organic, meaning there are no herbicides, pesticides and chemical fertilzers used in the vineyard.
The organic red grapes were hand picked from our organic vineyard in early March.
After crushing, the ferment was started with natural yeasts and continued at 22C until the ferment was at its require tannin level.
Then, the must was drained, pressed and returned to an open fermenter. Once the sugar was at a desirable level,
the natural red wine was transferred to oak barriques with a little yeast lees for underground cellaring and maturation in french oak casks.
After twenty two months the organic red wine was racked out of barrels and blended before bottling in glass bottles and sealed with natural cork.

Colour: Deep purple to red with a lovely brick red hue when is is cellared for several years
Bouquet: Fragrant combination of mulberry, chocolate and roses.
Palate: Rich and intense plummy flavours are complimented by the fine grain tannins. Integrated soft long palate and flavoursome mouth feel.
Cellaring: Pleasant drinking now, but has all the characteristics to ensure a long life and the development of even greater complexity.
