Product Information

Perfectly ripe organic Chardonnay was hand-picked at our vineyard which has only 375 chardonnay vines. The fruit was crushed, destemmed and pumped into our "new" 1988 pneumatic press for draining the free run. The ferment was started with our natural yeasts and continued at 20C. The ferment continued until the carbon dioxide gas production slowed and the sugar level was low. The wine was pumped to a tank with a little yeast lee for underground cellaring for 6 months. The wine was then sparkled and bottled to produce a brut style methode traditional sparkling bubbly blanc de blanc style.

What is Methode Traditional? This high-quality wine has a very fine bead that is 'bubbles'. After a minimum of 24 months of maturation, the bottles were hand riddled for a minimum seven days, they are then disgorged by hand and immediately crown capped - ready for consumption.  Alcohol is 12.5%. NB: Chill the bottle before serving and note the bottle is under lots of pressure; remove cap carefully and quickly with a good quality bottle opener.

A delightful dry white "champagne-style" vintage sparkling wine we call Madeleine Claire, after my daughter.

The current vintage release is 2014.

Madeleine Claire Label

The red and the white sparkling “Madeleine Claire” are made from shiraz and chardonnay respectively.  They have exactly the same labels as I only make a small amount of sparkling shiraz and therefore it would be costly to have a different label.

The chardonnay has a gold foil hood one can see the white wine in the bottle, whereas the shiraz has a gold, black or maroon hood and it is very hard to see through the bottle.
