What is Australian brandy made from?

All Australian brandy's and French cognacs are made from grapes unless they are marked as made from other fruits. At Harris Organic we use organic grapes to make Pisco and Eau de vie organic brandys. The organic grape wine is twice distilled from a preservative-free wine made especially from Pedro Ximenez and other organic grapes.  The higher alcohols in the brandy spirit is the largest group of volatile compounds found in brandy, giving them their distinctive aroma, flavour and primary character.

Organic Brandy - Single cask brandy

Our certified Organic Brandy is double-distilled using a wood-fired pot still. The hand-made special organic brandy is evocative of the best brandies made at Cognac in France. Once the organic brandy spirit has been collected it is placed in small oak casks in the underground cellar to mature for a minimum of 3 years. The organic alcohol content is 40% by volume. This organic brandy has complex characters that include caramel, toffee, notes of orange, vanilla, smoky spice and cloves. This smooth craft brandy will delight you.

We reckon we have the best brandy in Australia, with two bronze medals at the Perth Royal Show with our 8-year-old Napolean organic brandy.

New Brandy classifications

The French brandy age grading system has been adopted by much of the world, although its use is not regulated outside of France. A set of new classifications were made and gazetted in April 2018. Brandys are labelled with one of the five following grades:

  • V.S.: “Very special” brandy, otherwise known as three-star brandy, designates a blend in which the youngest brandy has been aged in oak for a minimum of two years.
  • V.S.O.P.: “Very superior old pale” brandy, otherwise known as “reserve” or five-star brandy, is aged in oak for a minimum of four years.
  • Napoleon: A new classification, Napoleon brandy has been oak-aged for a minimum of six years (this used to be XO class).
  • XO: “Extra old” brandy is aged in oak for a minimum of 10 years, was 6 years
  • Hors d'âge: “Beyond age” brandy, a term created by producers who wanted to market their highest quality brandies which extended well beyond that standard aging scale, have usually been aged 20+ years.

Such a dedicated approach to creating our own alcohol is rarely seen in the industry and offers you a first-hand experience from vine to bottle.  Double-distilled using a wood-fired pot still these hand-made brands are evocative of the old French brandy brands made at Cognac in France.  There is no other brand of organic brandy in Australia, other than the Harris Organic brand.

Why is brandy chestnut in colour and not clear

Brandy is chestnut or straw in colour as the alcohol acts as a solvent on the wood of the oak casks, extracting flavour and colour from the French oak casks. Some distillers add sugar and caramel to increase the palate and colour of the spirit. At Harris Organic we add nothing besides rainwater to our finished organic brandy spirits.

How is Australian Brandy made? How to make Brandy?

Our Australian Brandy is made by distilling a specially made wine (of approximately 12% alcohol) in a pot still to refine the wine and increase the alcohol content of the resulting organic brandy spirit. Once the spirit has passed through the still twice the clear brandy spirit has an alcoholic content of approximately 70% (140 proof), it is then stored in oak casks in the underground cellar for a minimum of three years to become our certified organic Australian brandy.

Once you have the preservative-free wine, brandy is easy to make by using a pot still, although it takes a lot of time and effort, especially as it is a wood-fired pot still. The pot still has to be continually tended to keep the fire burning. A special finished fermented wine is boiled at a temperature between the boiling point of the alcohol and the boiling point of water.

Meaning, the temperature varies as the organic alcohol content reduces during the distillation process.

The resulting vapour is transferred and cooled in a condenser. The cooled vapours contain most of the alcohol from the original liquid along with some of its water.

To drive out more of the water, always saving the alcohol, the distillation process can be repeated several times depending on the alcohol content desired, depending on the apparatus used.

The distillation process is used to produce both fine and mass-produced brandy, though the final products are dramatically different. Australian Brandy's tend to be lighter in style than cognac brandy's.
