What is Australian brandy made from?

All Australian brandy and French organic cognacs are made from grapes unless they are marked as made from other fruits. At Harris Organic we use organic grapes to make Pisco and Eau de vie organic brandies. The organic grape wine is twice distilled from a preservative-free wine made especially from Pedro Ximenez and other organic grapes.  The higher alcohols in the brandy spirit are the largest group of volatile compounds found in brandy, giving them their distinctive aroma, flavour and primary characteristics.

Australian brandy is made from grape wine that has been distilled and then aged in oak barrels. The grapes used to make the wine can come from various wine-growing regions throughout Australia, but they are typically from warmer climates, such as the Swan Valley wine region.

The process of making brandy begins with the fermentation of grape juice to produce wine. This wine is then distilled to remove the water and increase the alcohol content. The resulting spirit is then aged in oak barrels, which can impart flavours and aromas such as vanilla, caramel, and spice.

New Brandy classifications

The French organic cognac brandy age grading system has been adopted by much of the world, although its use is not regulated outside of France. A set of new classifications were made and gazetted in April 2018. Brandys are labelled with one of the five following grades:

  • V.S.: “Very special” brandy, otherwise known as three-star brandy, designates a blend in which the youngest brandy has been aged in oak for a minimum of two years.
  • V.S.O.P.: “Very superior old pale” brandy, otherwise known as “reserve” or five-star brandy, is aged in oak for a minimum of four years.
  • Napoleon: A new classification, Napoleon brandy has been oak-aged for a minimum of six years (this used to be XO class).
  • XO brandy: “Extra Old” brandy is aged in oak for a minimum of 10 years, it used to be 6 years of age.
  • Hors d'âge: “Beyond age” brandy, a term created by producers who wanted to market their highest quality brandies that extended well beyond that standard aging scale, have usually been aged 20+ years.

Why is brandy chestnut in colour and not clear?

Brandy is typically chestnut or amber in colour because it is aged in wooden barrels, which imparts colour and flavour to the liquor. When brandy is distilled, it is clear like any other distilled spirit, but the aging process in oak barrels changes its appearance.

The wood from the barrels contains natural chemicals such as tannins and vanillin, which interact with the alcohol to create a rich, complex flavour and a deep colour. The longer the brandy is aged in the barrel, the darker its colour becomes.

In addition, brandy can also be coloured with caramel, a common practice in some regions to give it a consistent appearance. This caramel colouring is added to the brandy after it has been aged in the barrel. So, the chestnut or amber colour of brandy is a result of both the aging process in oak barrels and the addition of caramel colouring, if used.

How is Australian Brandy made? How to make Brandy?

Our Australian Brandy is made by distilling a specially made wine (of approximately 12% alcohol) in a pot still to refine the wine and increase the brandy alcohol content of the resulting organic brandy spirit. Once the spirit has passed through the still twice the clear brandy spirit has an alcoholic content of approximately 70% (140 proof), it is then stored in oak casks in the underground cellar for a minimum of three years to become our certified organic Australian brandy.

Once you have the preservative-free wine, brandy is easy to make by using a pot still, although it takes a lot of time and effort, especially as it is a wood-fired pot still. The pot still has to be continually tended to keep the fire burning. A special finished fermented wine is boiled at a temperature between the boiling point of the alcohol and the boiling point of water.  Meaning, that the temperature varies as the organic brandy alcohol content reduces during the distillation process.

The resulting vapour is transferred and cooled in a condenser. The cooled vapours contain most of the alcohol from the original liquid along with some of its water and flavour. 

To drive out more of the water, always saving the alcohol, the distillation process can be repeated several times depending on the alcohol content desired and depending on the apparatus used.

The distillation process is used to produce both fine and mass-produced brandy, though the final products are dramatically different. Australian Brandy's tend to be lighter in style than cognac brandies.

Some distillers add sugar and caramel to increase the palate and colour of the clear brandy spirit. Organic brandy - brandy sauce for Christmas pudding

Ingredients
4 eggs separated into whites and yolks
1 1/2 cup caster sugar
1 pinch salt
2 cup cream
6 tbs organic brandy to taste
Method
Whisk the egg whites until stiff. Add the salt and sugar.
Mix until sugar is blended into the egg whites.
Add egg yolks, one at a time.
Whip cream and fold into mixture.
Add organic brandy.
NOTES
The organic brandy will go to the bottom after a day or two, but you can just gently mix it back in.

I guess that is because the description is only "personal" to avoid import customs issues, so the staff and customs department do not know what it is. How to flambe' the meringue on a Bombe Alaska.

To flambé, the meringue, warm the brandy in a small pot over low heat for 1-2 minutes (do not boil). Place the Bombe Alaska on the table to serve and, using a small ladle, carefully pour 2 tablespoons of brandy onto the top of the meringue then, slowly and carefully ladle more brandy allowing it to flow down the meringue like a volcano. Turn out the lights. Use a long match to ignite the brandy. Once the alcohol has burned off and your guests have been adequately impressed, use a warm knife to slice the baked Bombe Alaska into wedges and serve immediately.
