This five litre (5L) bulk Pedro Ximenez sweet sherry style wine has a golden colour with flavours of raisins and butter-scotch and has a fine palate and dry finish that is beautifully balanced. This sweet sherry is great for cooking. This sweet Pedro Ximenez wine was fortified with a clean brandy spirit. It is one of our sweet wine range. The alcohol by volume is 18.5%, and our richer organic liqueur style is also available in 375 mL bottles.

How to make a sherry PX jus?

Px jus is a pedro ximenez reduction of the sweet Pedro Ximenez wine. Place a cup of sherry PX in a pan on low heat and let the PX wine simmer, do not boil.

A PX jus is a reduction sauce that is simple to make and pairs, particularly with savoury foods, such as pork belly and blue cheeses. Try PX jus with chocolate and other desserts, including your favourite ice cream! You’ll want to put it on all sorts of things!

Pedro Ximenez port fortified winemaking

Very sweet and ripe and sun-dried organic sherry Pedro Ximenez grapes are crushed and de-stemmed before being pumped into a fermenting tank. The ferment is started with natural yeasts and continues at 20C until the ferment has proceeded through about 2-3 degrees of sugar reduction.

The skins are drained and basket pressed, and the juice is returned to an open fermenter under the winery verandah. The ferment continues at 20-25 degrees Celsius until the wine-maker determines it is the correct time to fortify the wine with organic brandy spirit to raise the alcohol content to 19 per cent. Once the ferment has stopped the wine is pumped to oak hogsheads for underground cellaring and maturation. After a minimum of four years, the wine is bottled and sealed.

This Pedro Ximenez white wine has organic neutral brandy spirit added and is about 19% alcohol. Some small amounts of minimal preservatives in the way of sulphites are added. It is clarified and filtered before bottling. Harris recommends consuming within one month after opening, as we want you to come back for more.

Alcohol - 18+% pH 3.9, Residual Sugar - 5+ Baume'. Total sulphides SO2, less than 100 ppm.
