2018 Vintage Port - Bronze medal - Swan Valley Wine Show.

A gorgeous flavoursome fortified organic port wine, called VINTAGE SHIRAZ, has flavours of plums, cherries, liquorice and honey. The youthful colour with purple hues has a beautifully full palate that is silky smooth. This vintage port wine can be drunk now or kept for maturation for a minimum of twenty years.

Fully ripe dry-grown organic Shiraz was hand-picked at a high sugar level from our organic vineyard on the 19th of March 2018. After crushing, the ferment was started with natural yeasts and continued at 30C until the ferment proceeded through 11 Baume'. Then the must juice was drained, basket pressed and returned to an open fermenter. Once the sugar was at a desirable level the sweet red wine was fortified with certified organic brandy spirit, an unwooded brandy, prior to underground cellaring and maturation. After 22 months the wine was bottled with a cork seal.   Alcohol - 18.5 %    pH 3.7    residual sugar about 90g/L.

Winemakers note: return to the cellar for recorking every twenty years. The sweet red port-wine label will be "VINTAGE SHIRAZ" and the alcohol content will read 18.5%
